Ingredients
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large cold egg
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips
- 3/4 cup coarsely chopped walnuts
- Sea salt, optional
Instructions
- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer or using a hand mixer, beat cold butter with both sugars until creamy. Add the cold egg and vanilla extract; mix to combine.
- Gradually add the dry ingredients along with chopped chocolate and 1 cup of chocolate chips; mix until just combined.
- Scoop dough into large balls using a cookie scoop (about ½ cup each) without smoothing them out. Press remaining chocolate chips onto each ball.
- Bake for 12-13 minutes until edges are golden brown. Optionally sprinkle with sea salt after removing from the oven and allow cooling on the sheets for about 5 minutes before transferring to wire racks.
