- 1 tbsp oil
- 1 onion (diced)
- 3 garlic cloves (minced)
- 2 stalks celery (or ½ small celery root, diced)
- 2 medium carrots (diced)
- 2 pounds potatoes (chopped)
- 4 cups vegetable broth
- 1/3 cup dairy-free cream
- Salt (to taste)
- Pepper (to taste)
- 1/2 tsp dried marjoram
- 1 pinch nutmeg
Instructions
- Heat oil in a large pot over medium heat. Sauté diced onion for about three minutes until softened. Add minced garlic, celery, carrots, potatoes, and spices; sauté for one minute.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for about twenty minutes until vegetables are tender.
- Blend half of the soup until smooth using an immersion blender or regular blender.
- Stir blended soup back into the pot with unblended soup; mix in dairy-free cream.
- Simmer for a few more minutes before serving.
