Ingredients

  • 1 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or ½ small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp dried marjoram
  • 1 pinch nutmeg

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion for about three minutes until softened. Add minced garlic, celery, carrots, potatoes, and spices; sauté for one minute.
  2. Pour in vegetable broth and bring to a boil.
  3. Reduce heat and simmer for about twenty minutes until vegetables are tender.
  4. Blend half of the soup until smooth using an immersion blender or regular blender.
  5. Stir blended soup back into the pot with unblended soup; mix in dairy-free cream.
  6. Simmer for a few more minutes before serving.
