- 1 lb shrimp, peeled and chopped
- 1/2 cup rice flour
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 cup cold water
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup fresh mint leaves, chopped (optional)
- 1–2 small red chilies, finely chopped (optional)
- Vegetable oil for frying
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup warm water
- 1 garlic clove, minced
- 1–2 small red chilies, finely chopped (optional)
- 1 tablespoon rice vinegar, optional for extra tang
Instructions
- In a mixing bowl, combine the rice flour, all-purpose flour, baking powder, salt, and black pepper.
- Gradually whisk in cold water until you achieve a smooth batter.
- Add the egg and mix well until fully incorporated.
- Fold in the chopped shrimp along with green onions, cilantro, mint leaves (if using), and red chilies (if desired) into the batter.
- Heat vegetable oil in a frying pan or deep fryer over medium-high heat until hot.
- Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides (about 3-4 minutes per side).
- Remove fritters from oil and place them on paper towels to drain excess oil.
- In another bowl, combine fish sauce, sugar, lime juice, warm water, minced garlic, chopped red chilies (if using), and rice vinegar (if desired). Stir until sugar is dissolved completely.
