- 230 g glutinous rice flour
- 65 g cornstarch
- 40 g sugar
- 300 g watermelon juice (blended from watermelon)
- 30 g butter
- Cooked glutinous rice flour (for dusting)
Instructions
- Cut the watermelon into chunks and blend until smooth to yield approximately 300 g of juice. Strain through a fine mesh sieve if desired.
- In a mixing bowl, whisk together glutinous rice flour, cornstarch, and sugar until well combined.
- Add the watermelon juice and melted butter to the dry mixture, stirring until smooth.
- Pour the batter into a heatproof dish lined with parchment paper. Steam over boiling water for about 20–25 minutes until cooked through.
- Once steamed, cool slightly, then dust your workspace with cooked glutinous rice flour. Knead gently and roll out into discs or cut into squares.
