  • 1½ cups cooked cannellini or butter beans
  • 8 cups vegetable or chicken stock
  • 2 medium carrots
  • 1 cup celery
  • 1 cup red onion
  • 34 cloves garlic
  • 2 bay leaves
  • 2 tsp fresh thyme leaves
  • 1 cup celeriac
  • 1 medium sweet potato
  • 1 (14½ oz) can diced tomatoes with juice
  • ½ cup uncooked quinoa
  • 2 cups chopped fresh kale

Instructions

  1. Prepare the beans by soaking dried beans overnight or using the quick soak method. Drain and rinse before cooking.
  2. In a large pot, combine soaked beans with water or stock, season lightly, and simmer for about 45 minutes to 1½ hours until tender.
  3. Sauté carrots, celery, red onion, garlic, bay leaves, and thyme in olive oil over medium heat for about 8 minutes until softened. Add to the pot.
  4. Stir in celeriac, sweet potatoes, canned tomatoes, and quinoa; bring to a boil then reduce heat to simmer for about 20 minutes.
  5. Add chopped kale; cook for an additional 5–8 minutes until wilted. Adjust seasoning as needed.
