- 1 (16oz) jar of sliced tamed jalapeno pepper
- 1/2 cup almond flour
- 1 teaspoon cajun seasoning
- 1/2 teaspoon salt
- 3 eggs
- 2 tablespoons jalapeno juice, saved from the jar
- 2 cups ground beef rinds
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
Instructions
- Drain the jar of jalapenos and set aside 2 tablespoons of juice.
- Place the jalapeno slices between two paper towels to absorb excess liquid.
- In bowl one, mix together almond flour, cajun seasoning, and salt.
- In bowl two, whisk together eggs and reserved jalapeno juice.
- In bowl three, combine ground beef rinds, garlic powder, and cayenne pepper.
- Working in batches, dip each jalapeno slice into the almond flour mixture until lightly coated.
- Next, dip each slice into the egg wash ensuring it gets fully covered.
- Finally, coat each slice in the beef rind mixture. Repeat this process with all remaining jalapeno slices.
- Place a layer of breaded jalapeno slices in the air fryer basket without overcrowding them.
- Lightly spray with avocado oil or olive oil for extra crispiness.
- Set your air fryer to 400 degrees Fahrenheit and cook for 6 minutes.
- Flip over each jalapeno slice and continue cooking for another 6 minutes until golden brown.
- Remove from the air fryer and repeat with any remaining breaded jalapenos.
