  • 3 large crisp apples (Honeycrisp or Granny Smith), cored and diced
  • 6 celery stalks, sliced
  • 1 cup walnuts, toasted and chopped
  • ½ cup dried cranberries
  • ¼ cup fresh parsley, chopped
  • Dressing: olive oil, lemon juice, honey, sea salt, black pepper

Instructions

  1. Wash apples, core them, and cut into ½-inch pieces.
  2. Slice celery stalks into ¼-inch thick pieces.
  3. In a dry skillet over medium-low heat, toast walnuts for about 5-7 minutes until fragrant. Remove from heat and chop roughly.
  4. Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl.
  5. In a large bowl, combine apples, celery stalks, walnuts, cranberries, and parsley. Drizzle most of the dressing over the mixture and toss gently.
  6. Add chopped celery leaves last and let the salad rest for 10-15 minutes before serving.
