  • 1 cup milk
  • 0.5 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup apple butter
  • 0.25 cup brown sugar
  • 0.5 cup flour (for swirl)
  • 0.25 cup cold butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with parchment paper liners.
  2. In a large bowl, mix together the flour, baking powder, sugar, salt, and cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, egg, vanilla extract, and apple butter until smooth.
  4. Combine the wet ingredients with the dry mixture gently until just combined.
  5. Prepare the swirl topping by mixing brown sugar, flour, cinnamon, and cold butter until crumbly.
  6. Spoon muffin batter into each liner about two-thirds full and sprinkle with the swirl topping.
  7. Bake for about 22 minutes or until a toothpick comes out clean.
  8. Let cool in the tin for 5 minutes before transferring to a wire rack.
