Ingredients

  • 4 medium zucchinis (sliced diagonally, 1/2 inch thick)
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • Salt & pepper
  • 1/2 cup freshly grated parmesan cheese
  • Optional: Balsamic reduction for drizzling

Instructions

  1. In a shallow baking dish, mix the olive oil and balsamic vinegar. Add the zucchini slices and toss to coat evenly. Season with salt and pepper.
  2. Allow the zucchini to marinate for at least 15 minutes while heating your grill to medium-high (500-600°F).
  3. Lightly grease the grill grates with olive oil. Place the marinated zucchini on the grill, cooking for about 2 minutes per side with the lid closed. Check for doneness after an additional 2-6 minutes.
  4. Once cooked, reduce the grill heat to low and sprinkle grated parmesan over each piece of zucchini. Close the lid for one minute until slightly melted.
  5. Carefully remove from the grill and serve warm, optionally drizzled with balsamic reduction.
