Ingredients

Scale
  • 3 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup softened salted butter
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup softened salted butter (for streusel)
  • 1/4 cup granulated sugar (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/3 cup all-purpose flour (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with liners or grease with non-stick spray.
  2. In a large bowl, mash the bananas until smooth. Mix in sugar and softened butter using an electric mixer until combined. Add eggs and vanilla; blend until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  4. Scoop the batter evenly into the muffin cups.
  5. For the streusel topping, combine all ingredients in a separate bowl until crumbly; sprinkle over each muffin.
  6. Bake for about 20 minutes or until a toothpick inserted comes out clean. Cool in the pan for at least 10 minutes before serving.
