  • 3 large red beets (cooked, peeled, and thinly sliced)
  • 3 large golden beets (cooked, peeled, and thinly sliced)
  • 16 oz goat cheese (at room temperature)
  • 3 cloves garlic (grated)
  • ½ cup green onion (finely chopped)
  • Salt to taste
  • Arugula for serving
  • Olive oil for serving
  • Bread for serving

Instructions

  1. Cook the red and golden beets until tender. Once cooled, peel and slice them thinly.
  2. In a mixing bowl, blend the goat cheese with grated garlic, chopped green onion, and salt until creamy.
  3. Layer half of the goat cheese mixture over one layer of sliced beets in a loaf pan. Add another layer of sliced beets on top. Repeat with the remaining goat cheese and another beet layer.
  4. Cover tightly with plastic wrap and refrigerate for at least four hours or overnight to set.
  5. Once set, invert the terrine onto a cutting board and slice into thick pieces. Serve drizzled with olive oil over arugula.
