  • ¼ cup unsalted butter, melted
  • 1 teaspoon corn starch
  • 1 cup all-purpose flour

  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla
  • ½ cup Greek yogurt
  • 1 ½ cup fresh berries (about 1 cup blueberries and ½ cup raspberries)
  • 6 oz. cream cheese, room temperature
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla
  • ¾ cup powdered sugar
  • 1 ½2 ½ teaspoons milk or cream

Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin tin with paper liners.
  2. In one bowl, mix flour, baking powder, and salt. In another bowl, whisk together egg, granulated sugar, Greek yogurt, melted butter, and vanilla until smooth.
  3. Gently fold wet ingredients into dry ingredients until just combined. Carefully fold in fresh berries.
  4. Spoon batter into muffin liners, creating a small dent in each for the cream cheese filling. Add cream cheese mixture into each dent and top with remaining batter.
  5. Sprinkle streusel topping over each muffin. Bake for about 30-35 minutes at 350°F (175°C) until golden brown.
