  • 2 cups graham cracker crumbs
  • 2 packages (8 oz each) cream cheese
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice (fresh)
  • 1/2 cup sour cream
  • 2 large eggs
  • 6 tablespoons salted butter (melted)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F. Prepare your ingredients by bringing cream cheese, sour cream, and eggs to room temperature.
  2. In a saucepan, combine blackberries, sugar, and water. Boil for 2-3 minutes then simmer until thickened. Set aside to cool.
  3. For the crust, pulse graham crackers in a food processor until fine crumbs form. Mix with sugar and melted butter until moistened. Press into an 8×8 inch baking pan and bake for 9 minutes.
  4. Beat cream cheese, sugar, salt, and lemon zest in a bowl until fluffy. Add sour cream, eggs one at a time, and lemon juice; mix until smooth.
  5. Pour the filling over the cooled crust. Swirl in the blackberry puree gently and bake at 325°F for about 55-60 minutes until the center jiggles slightly.
  6. Cool at room temperature before refrigerating for at least three hours.
