- 1 large egg yolk
- 1 tablespoon heavy cream
- 1 ¼ cups all-purpose flour
- ⅓ cup confectioners' sugar
- 8 tablespoons unsalted butter
- ¼ cup lemon zest + ½ cup lemon juice
- 1 large egg + 5 large yolks
- ⅓ cup honey
- 10 ounces blueberries
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, confectioners' sugar, and salt. Add chilled butter and combine until crumbly. Stir in egg yolk, heavy cream, and vanilla; press into tart pan and bake for about 20 minutes.
- For the lemon curd, heat lemon juice, zest, honey, eggs, and yolks in a saucepan while whisking until thickened (around 10 minutes). Remove from heat and stir in butter.
- Prepare blueberry filling by cooking blueberries with honey in a saucepan until juicy. Mix cornstarch with water and add to thicken.
- Pour lemon curd into the cooled crust, followed by the blueberry filling. Chill for at least four hours before serving.
