  • ½ cup (113g) unsalted butter, browned
  • ½ cup (110g) packed light brown sugar
  • ½ cup (100g) granulated sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1 large egg, at room temperature
  • ⅔ cup (75g) finely grated carrots, blotted to remove excess moisture
  • 1 ½ cups (215g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup (55g) chopped pecans
  • 3 oz (85g) cream cheese, at room temperature
  • 2 tbsp (25g) granulated sugar
  • milk to thin it out

Instructions

  1. Brown the butter and let it cool.
  2. Grate and blot the carrots to remove excess moisture.
  3. In a bowl, whisk together cooled brown butter, sugars, egg, and vanilla until smooth. Stir in grated carrots.
  4. In another bowl, mix flour, baking soda, cinnamon, nutmeg, and salt; fold into wet ingredients along with the pecans.
  5. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  6. Scoop dough onto prepared sheets and bake for 10-12 minutes until golden around edges. Cool before icing.
  7. For icing: Beat cream cheese and sugar until smooth; add milk to reach desired consistency.
