Ingredients
- 6 boneless, skinless chicken thighs
- 1 tablespoon white vinegar
- Juice of 1 lemon
- 2 teaspoons kosher salt (plus more to taste)
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 2 bay leaves
- 2 tablespoons crushed garlic (divided)
- 1 tablespoon extra virgin olive oil (plus more for drizzling)
- 1 large yellow onion (diced)
- 1 large tomato (quartered)
- 8 cups chicken broth
- 2 bouillon cubes
- 2 carrots (diced)
- 1 to 2 small potatoes (diced very small)
- 1½ cups medium-grain rice
Instructions
- Marinate chicken thighs in vinegar, lemon juice, salt, pepper, paprika, garlic, and olive oil. Cover and refrigerate for at least one hour.
- In a large stock pot, heat olive oil over medium heat. Brown the marinated chicken on both sides.
- Sauté onions and tomatoes in the same pot until soft. Return the chicken to the pot.
- Add chicken broth, water, and bouillon cubes; bring to a boil and then simmer for one hour.
- Stir in rice and carrots; simmer for an additional thirty minutes.
- Add diced potatoes and let simmer until tender.
- Allow soup to rest before serving warm.
