Ingredients
- 6 oz Cream cheese (room temperature)
- 3 TBSP White granulated sugar
- 1 tsp Pure vanilla extract
- 3 cups All-purpose flour
- 1 tsp Baking soda
- 1 tsp Salt
- 2 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1 cup Unsalted butter (melted and cooled)
- 1 cup Brown sugar (packed light or dark)
- 1/2 cup White granulated sugar
- 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
- 2 Large egg yolks (room temperature)
- 2 oz Cream cheese (room temperature)
- 2 TBSP Unsalted butter (room temperature)
- 3/4 cup Powdered sugar (sifted)
- 1 tsp Pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine melted butter, brown sugar, and white granulated sugar. Mix until well blended.
- Add in the egg yolks and pure vanilla extract; beat until smooth.
- In another bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
- Gradually add dry ingredients to the wet mixture until combined.
- Fold in finely grated carrots.
- In a separate bowl, beat together room temperature cream cheese and unsalted butter until creamy.
- Gradually mix in powdered sugar until smooth.
- Add pure vanilla extract for flavor; mix until fully incorporated.
- Scoop out dough portions onto prepared baking sheets lined with parchment paper.
- Create an indentation in each dough ball using your thumb or the back of a spoon; fill it with about one teaspoon of cream cheese filling.
- Pinch the dough around the filling to seal it inside.
- Bake in preheated oven for about 15 minutes or until edges are lightly golden but centers appear soft. Allow cooling on the baking sheet for a few minutes before transferring to wire racks to cool completely.
