Ingredients

  • 1/4 cup warm water
  • 1 tablespoon honey
  • 3/4 teaspoon active dry yeast (optional)
  • 3/4 cup warm whole milk
  • 1 cup full fat plain Greek yogurt
  • 4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 8 ounces frozen spinach, thawed and squeezed dry
  • 1 1/2 cups shredded dry mozzarella cheese
  • 8 ounces feta cheese, crumbled
  • 1 cup tender mixed herbs (such as basil, cilantro, chives, and/or dill)
  • 12 cloves garlic, grated
  • 1 pinch crushed red pepper flakes
  • 6 tablespoons (4 + 2) salted butter, melted
  • Honey for serving (optional)

Instructions

  1. In a stand mixer bowl, combine warm water, honey, and yeast; let sit until bubbly (5–10 minutes). Add warm milk, Greek yogurt, flour, baking powder, baking soda, and salt. Mix until combined.
  2. Shape the dough into a ball and let it rise in a warm place for about 1 hour.
  3. For the filling, mix thawed spinach with herbs, mozzarella cheese, feta cheese, garlic, and crushed red pepper flakes in a bowl.
  4. Divide risen dough into 8 balls and flatten each ball into discs. Place filling in the center of each disc and fold to seal.
  5. Cook each naan in a preheated cast iron skillet over medium-high heat until golden brown on both sides.
