  • Zest of 1 lime
  • ¼ cup fresh lime juice (about 23 limes)
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt
  • 1 tablespoon sugar
  • 4 boneless, skinless chicken breast halves, cut into cubes
  • 34 ripe mangoes, peeled and cubed

Instructions

  1. Soak wooden skewers in water for 20-30 minutes to prevent burning.
  2. In a large bowl, whisk together olive oil, lime juice, lime zest, chili powder, cayenne pepper (if desired), kosher salt, and sugar.
  3. Add cubed chicken and mangoes to the marinade. Mix well and refrigerate for 2-4 hours.
  4. Preheat grill to medium heat.
  5. Thread marinated chicken and mango onto skewers alternately.
  6. Grill skewers for about 6-10 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
