  • 1 tbsp. Kosher Salt
  • ½ tbsp. Coarse Black Pepper
  • 1 tbsp. Seasoned Salt or BBQ Seasoning
  • 1 tsp. Garlic powder
  • 1 tsp. Onion Powder
  • 1 tsp. Smoked Paprika
  • 1 tsp. Italian Seasoning
  • ¼ tsp. Cayenne Pepper
  • ½ Lemon, juiced
  • ½ c. Mayo
  • 11 oz. Apricot Preserves
  • 2 Chipotle Adobe Peppers + 2 tbsp. Chipotle Sauce
  • 3 Garlic Cloves, minced
  • 2 tbsp. White apple vinegar
  • ¼ c. Olive Oil
  • 1 tbsp. Dijon Mustard
  • ¼ tsp. Garlic powder
  • Pinch of salt
  • Chopped cilantro

Instructions

  1. Marinate the chicken: In a mixing bowl, combine chicken thighs with salt, pepper, garlic powder, onion powder, smoked paprika, Italian seasoning, cayenne pepper, lemon juice, and mayo. Let sit for at least 30 minutes.
  2. Prepare the glaze: In a saucepan over medium heat, mix apricot preserves, chipotle peppers and sauce, minced garlic, vinegar, olive oil, Dijon mustard, garlic powder, and salt until smooth; simmer briefly.
  3. Preheat the grill and spray with non-stick spray. Grill chicken skin side up for about 7 minutes per side until an internal temperature of 165°F is reached.
  4. Brush with glaze in the last few minutes of grilling for a caramelized finish.
  5. Rest briefly before serving and garnish with chopped cilantro.
