  • 6 teaspoons + 6 tablespoons salted butter
  • 1 1/2 cups whole milk
  • 3 large eggs
  • 1 tablespoon melted salted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 4 ounces cream cheese (optional for filling)
  • 1 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 450°F (232°C). Place a teaspoon of butter in each cup of a popover or muffin pan and heat in the oven until melted.
  2. In a medium bowl, whisk together room temperature milk and eggs until frothy. Add melted butter, vanilla, flour, and salt; mix until combined with small lumps.
  3. Remove the hot pan from the oven, grease it with melted butter again if needed, then fill each cup about three-quarters full with batter. Optionally, add a cube of cream cheese to each.
  4. Bake for 20 minutes at 450°F (232°C), then reduce temperature to 350°F (177°C) and bake for another 15-18 minutes or until puffed and golden.
  5. Meanwhile, melt remaining butter in a skillet until deep golden brown.
  6. Combine sugar and cinnamon in a shallow dish. Brush warm popovers with brown butter and roll them in the cinnamon sugar mixture.
