  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons oil
  • 1/2 large onion (diced)
  • 1 jalapeno (finely diced)
  • 3 garlic cloves (finely diced)
  • 1/2 tablespoon fresh ginger (diced or 1 teaspoon ground ginger)
  • 14-ounce can canned coconut milk
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • Lime zest (from one lime)
  • 2 tablespoons fresh lime juice
  • Cilantro (chopped)

Instructions

  1. 1. Season chicken generously with salt and pepper. Heat oil in a large skillet over medium-high heat and brown for 2-3 minutes. Remove and set aside.
  2. 2. In the same skillet, reduce heat to medium and sauté onion and jalapeno until softened. Add garlic and ginger; cook for another minute.
  3. 3. Stir in coconut milk, soy sauce, brown sugar, lime zest, and lime juice. Let the sauce thicken for about 3-4 minutes.
  4. 4. Return chicken to the pan; cook until fully cooked through (165°F internal temperature).
  5. 5. Garnish with chopped cilantro before serving.
