Ingredients
- 4 egg whites
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 14 ounces sweetened flaked coconut
- 1/2 cup white chocolate chips (melted)
- 70–90 mini candy eggs
Instructions
- Preheat your oven to 300°F and coat a mini muffin pan with cooking spray.
- In a large bowl, whisk together egg whites, sugar, and salt until combined. Fold in the sweetened flaked coconut using a fork.
- Drop 2 tablespoons of the mixture into each muffin cup, pressing gently into the bottom and sides.
- Bake for 28-30 minutes until lightly golden. Cover with foil if browning too quickly.
- Let cool in the pan for 10 minutes before removing. Allow to cool completely on a wire rack.
- Pipe melted chocolate into each nest and top with candy eggs.
