- 4 medium over-ripe bananas (mashed)
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1/2 cup chopped pecans
- 4 oz cream cheese (softened)
- 2 tablespoons granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 teaspoons milk (if needed)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, mash the over-ripe bananas. Then add the granulated sugar, brown sugar, egg, vegetable oil, and vanilla extract. Whisk together until smooth.
- Gradually add the flour mixture until just combined; fold in chopped pecans.
- In another medium bowl, beat the softened cream cheese until smooth. Mix in the granulated sugar, egg yolk, and vanilla extract. Beat until well combined; if too thick, add milk gradually until desired consistency is achieved.
- Fill each muffin liner about 3/4 full with the banana batter. Top each with about 1 tablespoon of cream cheese mixture, swirling it gently into the batter with a toothpick.
- Place the muffin pan in the preheated oven and bake for 16-18 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool slightly before serving warm or at room temperature.
