  • 2 lbs boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1½ tbsp apple cider vinegar
  • 2 tsp sesame oil
  • ⅓ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • 2 tsp fresh ginger (grated)
  • 1½ tsp garlic (minced)
  • 2 tbsp cornstarch
  • ¼ cup water

Instructions

  1. Place the chicken thighs in the bottom of a 6-quart crock pot.
  2. In a mixing bowl, whisk together pineapple juice, apple cider vinegar, sesame oil, soy sauce, brown sugar, ketchup, ginger, and garlic until well combined.
  3. Pour the sauce over the chicken and cover the crock pot. Cook on high for 3-4 hours or low for 6-7 hours until tender.
  4. Remove the chicken and mix cornstarch with water in a small bowl until smooth. Stir this mixture into the crock pot to thicken the sauce.
  5. Return shredded or whole chicken to the pot and cook for an additional 10-15 minutes until thickened.
  6. Serve over rice or noodles and enjoy!
