  • ½ cup hot water
  • 1 tablespoon espresso powder
  • 1 ½ cups semisweet chocolate chips
  • 1 cup sour cream (room temperature)
  • ½ cup neutral oil (such as vegetable or canola oil)

Instructions

  1. Allow egg whites to come to room temperature for approximately 30 minutes.
  2. Whip egg whites until stiff peaks form; gradually add granulated sugar until glossy.
  3. Sift flour, cocoa powder, salt, baking powder, and baking soda together.
  4. Gently fold the dry mixture into the whipped egg whites until smooth.
  5. Pipe small circles onto lined baking sheets; let rest for about 30 minutes until skin forms.
  6. Preheat oven to 300°F (150°C) and bake for 15–20 minutes until risen and feet are formed.
  7. Cool completely before filling with the chocolate raspberry ganache.
