Ingredients

  • 2 medium zucchini
  • 1 red onion
  • 1 large red bell pepper
  • ½ cup oil and vinegar dressing
  • Optional: Dried herbs (thyme, oregano, or basil), salt, and pepper

Instructions

  1. Cut the zucchini into half lengthwise and then slice into pieces about 2 inches thick.
  2. Peel the onion, halve it, separate the layers, and cut each layer into similar-sized pieces.
  3. Halve the bell pepper, remove seeds and stem, then cut into pieces that match the size of the other vegetables.
  4. Place all prepared vegetables in a Ziploc bag or container and pour in the dressing until coated. Add herbs if desired.
  5. Seal tightly and marinate in the fridge for 4-6 hours.
  6. Preheat your grill pan over medium-high heat.
  7. Drain excess marinade from the vegetables before placing them on the grill pan.
  8. Grill with the lid closed for about 15-20 minutes, stirring every 5 minutes until tender yet slightly crisp.
  9. Season with salt and pepper before serving hot.
