Ingredients

  • 1 lb uncooked elbow macaroni
  • 12 teaspoons olive oil
  • 4 cups cubed chicken
  • 28 oz pineapple chunks
  • 2 red peppers
  • 2 carrots
  • 4 green onions
  • 1 cup mayonnaise
  • 4 tablespoons sour cream
  • 1/2 cup pineapple juice
  • 1 tablespoon whole grain mustard
  • 2 tablespoons apple cider vinegar
  • salt
  • black pepper

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse with cold water.
  2. While the pasta cooks, cube the chicken and chop the red peppers, carrots, and green onions.
  3. In a bowl, mix mayonnaise, sour cream, reserved pineapple juice, mustard, apple cider vinegar, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the cooled pasta, chicken, pineapple chunks, chopped vegetables, and dressing. Toss gently to coat.
  5. Cover and refrigerate for at least one hour before serving.
