- 1 lb uncooked elbow macaroni
- 1 – 2 teaspoons olive oil
- 4 cups cubed chicken
- 28 oz pineapple chunks
- 2 red peppers
- 2 carrots
- 4 green onions
- 1 cup mayonnaise
- 4 tablespoons sour cream
- 1/2 cup pineapple juice
- 1 tablespoon whole grain mustard
- 2 tablespoons apple cider vinegar
- salt
- black pepper
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and rinse with cold water.
- While the pasta cooks, cube the chicken and chop the red peppers, carrots, and green onions.
- In a bowl, mix mayonnaise, sour cream, reserved pineapple juice, mustard, apple cider vinegar, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooled pasta, chicken, pineapple chunks, chopped vegetables, and dressing. Toss gently to coat.
- Cover and refrigerate for at least one hour before serving.
