Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 3 cloves garlic, minced
- Salt and freshly cracked black pepper, to taste
- 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
- 2 medium sweet potatoes (about 500g / 1.1 lbs)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Optional: toasted pecans or pumpkin seeds
- Optional: extra maple syrup drizzle
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut sweet potatoes into 1-inch cubes, toss with olive oil, smoked paprika, salt, and pepper; spread on one side of the baking sheet.
- In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, remaining olive oil, thyme, salt, and pepper.
- Pat chicken thighs dry and place them on the other side of the baking sheet; brush half of the marinade over them.
- Roast for about 15 minutes; flip chicken and brush with remaining marinade while tossing sweet potatoes for even cooking.
- Continue roasting until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are tender.
- Serve in bowls topped with optional nuts or seeds and drizzle extra maple syrup.
