  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • Salt and freshly cracked black pepper, to taste
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
  • 2 medium sweet potatoes (about 500g / 1.1 lbs)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Optional: toasted pecans or pumpkin seeds
  • Optional: extra maple syrup drizzle

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut sweet potatoes into 1-inch cubes, toss with olive oil, smoked paprika, salt, and pepper; spread on one side of the baking sheet.
  3. In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, remaining olive oil, thyme, salt, and pepper.
  4. Pat chicken thighs dry and place them on the other side of the baking sheet; brush half of the marinade over them.
  5. Roast for about 15 minutes; flip chicken and brush with remaining marinade while tossing sweet potatoes for even cooking.
  6. Continue roasting until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are tender.
  7. Serve in bowls topped with optional nuts or seeds and drizzle extra maple syrup.
