- 1 package (16 oz extra-firm tofu, drained, pressed, and cubed into ½-inch pieces)
- 3 cloves garlic (minced)
- 1 white onion (diced)
- 1 red bell pepper (cut into chunks)
- 2 medium carrots (sliced)
- 1½ cups diced gold potatoes (from 2–3 medium potatoes)
- 2 cups cauliflower florets
- 1 can (15 oz tomato sauce)
- 1 can (15 oz lite coconut milk)
- ½ tablespoon pure maple syrup
- ½ tablespoon freshly grated ginger
- 1 tablespoon garam masala
- 1½ teaspoons cumin
- 1 teaspoon coriander
- ½ teaspoon ground turmeric
- ¼ teaspoon paprika
- ¼ teaspoon cayenne pepper (plus more if you like heat)
- ½ teaspoon salt
- Freshly ground black pepper
- ¾ cup frozen peas (added at the end)
- Fresh cilantro for garnish
Instructions
- Combine garlic, onion, red bell pepper, carrots, cauliflower, potatoes, tomato sauce, coconut milk, maple syrup, ginger, and spices in the slow cooker. Stir well.
- Gently add cubed tofu to the mixture and stir carefully.
- Cook on HIGH for 3–4 hours or LOW for 6–7 hours.
- About 5–10 minutes before serving, stir in frozen peas.
