Ingredients
- 9 oz fresh cheese tortellini
- 1 green bell pepper
- 1 red bell pepper
- 1/2 cup corn (steamed or canned)
- 1 heaping cup grape tomatoes
- 4 oz cheddar cheese (cubed)
- 1/2 cup extra virgin olive oil
- 1/2 cup white apple vinegar
- 2 TBSP Italian seasoning blend
- 1/2 TBSP garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Cook tortellini according to package instructions in boiling water until tender. Drain and rinse under cold water.
- In a bowl, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper.
- Chop bell peppers and prepare corn if using fresh or frozen.
- In a large mixing bowl, combine cooked tortellini, chopped vegetables, and cubed cheddar cheese.
- Pour half the dressing over the mixture and toss gently to coat. Let chill in the fridge for at least 30 minutes before serving.
