Ingredients

Scale
  • 1.52 lb Tri-Tip Roast
  • 1 tablespoon Worcestershire sauce
  • 1.5 teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • 56 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 2 tablespoons minced fresh rosemary
  • Kosher salt and black pepper

Instructions

  1. Marinate the Roast: Place tri-tip in a zip-top bag. In a bowl, whisk together Worcestershire sauce, Dijon mustard, olive oil, minced garlic, onion powder, and rosemary. Pour over the roast in the bag. Seal and massage to coat evenly. Refrigerate for at least 6 hours, up to 24 hours.
  2. Preheat Oven: Set your oven to 425°F.
  3. Prepare to Roast: Remove marinated roast from the fridge and place it in a shallow baking pan. Season generously with kosher salt and black pepper.
  4. Roast and Serve: Insert an instant-read thermometer into the thickest part of the meat. Roast for about 30-40 minutes until it reaches an internal temperature of 135°F to 140°F for medium-rare. Let rest covered with foil for 15 minutes before slicing against the grain.
