Ingredients

  • 2 3/4 cups gluten-free all-purpose rice flour blend with xanthan gum
  • 1/4 cup granulated sugar
  • 1/2 cup very cold unsalted butter (or dairy-free alternative)
  • 1/2 cup very cold shortening
  • 2 large eggs
  • 1/2 teaspoon apple cider vinegar
  • 16 teaspoons gluten-free seedless strawberry jam
  • 1 cup powdered sugar
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons water

Instructions

  1. In a mixing bowl, combine gluten-free flour, sugar, and salt.
  2. Add cold butter and shortening; blend until crumbly.
  3. In another bowl, whisk together eggs and apple cider vinegar; add to dry mix.
  4. Form dough into discs and refrigerate for at least 30 minutes.
  5. Roll out the chilled dough; cut into rectangles.
  6. Spoon jam onto half the rectangles and top with remaining pieces. Seal edges.
  7. Brush with egg wash and bake at 375°F (190°C) for about 20 minutes until golden brown.
  8. Cool slightly and drizzle with a glaze made of powdered sugar, vanilla extract, and water.
