- 1/4 cup granulated sugar
- 1/2 cup very cold unsalted butter (or dairy-free alternative)
- 1/2 cup very cold shortening
- 2 large eggs
- 1/2 teaspoon apple cider vinegar
- 16 teaspoons gluten-free seedless strawberry jam
- 1 cup powdered sugar
- 1/4 teaspoon pure vanilla extract
- 2 tablespoons water
Instructions
- In a mixing bowl, combine gluten-free flour, sugar, and salt.
- Add cold butter and shortening; blend until crumbly.
- In another bowl, whisk together eggs and apple cider vinegar; add to dry mix.
- Form dough into discs and refrigerate for at least 30 minutes.
- Roll out the chilled dough; cut into rectangles.
- Spoon jam onto half the rectangles and top with remaining pieces. Seal edges.
- Brush with egg wash and bake at 375°F (190°C) for about 20 minutes until golden brown.
- Cool slightly and drizzle with a glaze made of powdered sugar, vanilla extract, and water.
