- 15 cherry tomatoes (halved)
- 2 cups English cucumber (diced)
- 1 cup kalamata olives
- 1/2 cup red onion (diced)
- 2 tablespoons homemade Greek vinaigrette (or store-bought)
- Crumbled feta cheese
- Cooked rice of your choice

Instructions
- In a mixing bowl, combine 1 cup mayonnaise, 1 cup diced cucumber, 1 tablespoon fresh lemon juice, 1 tablespoon minced garlic, 1/4 teaspoon kosher salt, 1/4 teaspoon ground black pepper, 1/2 teaspoon dried dill, and 1 teaspoon chopped fresh mint. Mix well and refrigerate.
- In a large bowl, mix together 1 pound ground chicken, 1 egg, and 1/2 cup almond flour. Add in seasonings: 1 teaspoon kosher salt, 1 teaspoon dried oregano leaves, 1 teaspoon dried basil, 1 teaspoon dried dill, 1/2 teaspoon onion powder, 1 teaspoon garlic powder, and 1/2 teaspoon ground black pepper. Gently combine until just mixed.
- Wet your hands to prevent sticking and form small balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
- Preheat oven to 400°F (200°C) and bake meatballs for about 15 minutes until cooked through and golden brown.
