  • 1/2 cup almond flour
  • 1 tablespoon fresh lemon juice
  • 1 cup mayonnaise
  • 1 cup cucumber (diced)
  • 1 tablespoon garlic (minced)
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon fresh mint (packed and chopped)
  • 15 cherry tomatoes (halved)
  • 2 cups English cucumber (diced)
  • 1 cup kalamata olives
  • 1/2 cup red onion (diced)
  • 2 tablespoons homemade Greek vinaigrette (or store-bought)
  • Crumbled feta cheese
  • Cooked rice of your choice
  • Lemon orzo pasta
  • Pita bread
  • Quick pickled onions

Instructions

  1. In a mixing bowl, combine 1 cup mayonnaise, 1 cup diced cucumber, 1 tablespoon fresh lemon juice, 1 tablespoon minced garlic, 1/4 teaspoon kosher salt, 1/4 teaspoon ground black pepper, 1/2 teaspoon dried dill, and 1 teaspoon chopped fresh mint. Mix well and refrigerate.
  2. In a large bowl, mix together 1 pound ground chicken, 1 egg, and 1/2 cup almond flour. Add in seasonings: 1 teaspoon kosher salt, 1 teaspoon dried oregano leaves, 1 teaspoon dried basil, 1 teaspoon dried dill, 1/2 teaspoon onion powder, 1 teaspoon garlic powder, and 1/2 teaspoon ground black pepper. Gently combine until just mixed.
  3. Wet your hands to prevent sticking and form small balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
  4. Preheat oven to 400°F (200°C) and bake meatballs for about 15 minutes until cooked through and golden brown.
  5. Plate meatballs warm with tzatziki sauce on top and enjoy with cherry tomatoes, diced cucumbers, olives, and your choice of rice or pasta.
