  • 2 tablespoons lemon juice
  • 4 tablespoons olive oil
  • 1 tablespoon red apple vinegar
  • 1 teaspoon dried oregano
  • 1 ½ cups plain Greek yogurt
  • 1/2 cup minced cucumber
  • 1/4 cup fresh dill (finely minced)
  • Salt and pepper to taste
  • 1 cup finely diced cucumber
  • 1/2 cup finely diced tomato
  • 1/4 cup finely diced kalamata olives
  • 1/4 cup finely diced green olives
  • 1 teaspoon lemon juice
  • 1 tablespoon honey
  • 2 tablespoons minced fresh parsley

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together lemon juice, olive oil, honey, red apple vinegar, oregano, salt, pepper, and minced garlic. Coat the chicken chunks in the marinade and refrigerate for at least 30 minutes.
  2. Prepare the yogurt dip: Mix Greek yogurt with lemon juice, minced cucumber, and dill; season with salt and pepper to taste.
  3. Prepare the tomato-olive relish: Combine finely diced cucumber, diced tomato, kalamata and green olives. Add lemon juice, red apple vinegar, honey, olive oil, minced parsley, salt, and pepper. Mix well and let sit.
  4. Grill the chicken skewers: Preheat your grill over medium-high heat. Thread marinated chicken onto skewers and grill for about 10–15 minutes until fully cooked.
  5. Serve hot with the yogurt dip and tomato-olive relish.
