  • 4 boneless skinless chicken breasts or thighs
  • ½ cup pineapple juice
  • ¼ cup soy sauce or teriyaki sauce
  • 2 tablespoons brown sugar or honey
  • 2 cloves garlic (minced)
  • 1 teaspoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional for heat)
  • 1 fresh pineapple (sliced into rings or spears)
  • 1 tablespoon honey (optional, for extra caramelization)
  • 1 tablespoon lime juice

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce (or teriyaki), brown sugar (or honey), minced garlic, grated ginger, lime juice, sesame oil, black pepper, and red pepper flakes until well combined.
  2. Place the chicken in a resealable bag or shallow dish and pour half of the marinade over it. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Prepare the fresh pineapple by slicing it into rings or spears. Brush with a mixture of honey (if using) and lime juice.
  5. Remove chicken from marinade (discard remaining marinade). Grill chicken for about 6-7 minutes per side until fully cooked through; add pineapple to the grill during the last few minutes to caramelize.
  6. Serve grilled chicken alongside pineapple slices.
