- 2 pounds chicken breast tenderloins
- ¼ cup white vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons jarred pesto sauce or fresh pesto
- 2 cloves garlic, minced
- 1 teaspoon monkfruit or sweetener of choice
- 2 teaspoons kosher salt

Instructions
- In a large bowl, add the white vinegar, dijon mustard, pesto, garlic, sweetener, salt, and pepper. Whisk these ingredients together until well combined.
- Add the chicken tenderloins to the marinade mixture. Cover and chill in the refrigerator for at least 2 hours, or up to 6 hours. Once marinated, allow the chicken to come to room temperature for about 20 minutes before grilling.
- Preheat your grill to high heat and prepare it for cooking. Lower the heat to medium and place the marinated chicken directly onto the grates. Brush with any leftover marinade every 30 seconds while grilling. Cook for about 3-5 minutes per side until fully cooked (internal temperature should reach 165°F).
