  • 45 pounds boneless, skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon paprika (smoked or sweet)
  • Pineapple rings (fresh or canned) for grilling
  • ½ cup sliced green onions (for garnish)

Instructions

  1. Rinse and pat dry the chicken thighs.
  2. In a large bowl or ziplock bag, mix together brown sugar, ketchup, soy sauce, pineapple juice, ginger paste, garlic paste, apple cider vinegar, cumin, black pepper, and paprika to create the marinade.
  3. Set aside ½ cup of the marinade for later use. Add the chicken to the remaining marinade, ensuring it's fully coated. Seal and refrigerate for at least 4 hours or overnight.
  4. Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.
  5. Grill the marinated chicken for about 10 minutes on each side until it reaches an internal temperature of 165°F. Discard any used marinade.
  6. Grill pineapple rings alongside the chicken until golden.
  7. Brush reserved marinade over the grilled chicken before serving.
