Ingredients

  • 1 tablespoon vegetable oil
  • 2 chicken breasts (cut into strips)
  • 3 tablespoons jerk seasoning
  • 2 cups vegetable stock
  • 4 cups dried pasta
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese
  • 3 bell peppers (sliced)
  • ½ cup green onions (sliced)

Instructions

  1. Heat vegetable oil in the Instant Pot on SAUTE mode. Add chicken strips and half of the jerk seasoning; cook until slightly browned. Stir in minced garlic for an additional minute.
  2. Layer dried pasta over the chicken, then pour in vegetable stock until it's just covering the pasta.
  3. Seal the lid and set to PRESSURE COOK for 5 minutes, ensuring the vent is set to SEALING.
  4. Once done, quick-release steam by turning the vent to VENTING.
  5. Stir the pasta and check liquid levels; remove excess if needed.
  6. Mix in remaining jerk seasoning, heavy cream, parmesan cheese, and sliced bell peppers; stir to combine.
  7. Cover for a few minutes to soften the peppers slightly before serving with sliced green onions on top.
