  • 6 halved jalapenos (seeds and ribs removed)
  • 2 tbsp avocado or olive oil
  • 16 ounces Fiber Gourmet light elbow pasta
  • 1/2 cup whipped cream cheese
  • 1 1/2 cups plain Greek yogurt
  • 6 ounces shredded cheddar cheese

Instructions

  1. Boil salted water in a large pot.
  2. Toss jalapenos with olive oil and broil on a baking sheet for about 10 minutes until charred.
  3. Cook the elbow pasta according to package directions until al dente; drain well.
  4. Combine drained pasta with whipped cream cheese in a mixing bowl.
  5. Steam the broiled jalapenos in a sealed container for 20 minutes, then peel and chop them.
  6. Mix chopped jalapenos, Greek yogurt, garlic powder, onion powder, salt, pepper, and cheddar into the pasta mixture.
  7. Chill before serving.
