  • 2 tbsp honey
  • 1.5 tsp garlic powder
  • 2.5 tsp oregano
  • 2 tsp basil
  • 1.25 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp red pepper flakes
  • 1 cup Greek yogurt
  • 1/2 cup cucumber (grated and squeezed of excess liquid)
  • 1.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tsp garlic (finely minced)
  • 1/2 tsp salt
  • 1 tbsp dill (freshly chopped for best flavor)
  • 2 cups cooked rice
  • 2.5 cups tomatoes (diced into 1/2-inch pieces)
  • 2 cups cucumber (diced into 1/2-inch pieces)
  • 4 cups lettuce (torn or chopped)
  • 1 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. In a large bowl, whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes. Add the chicken pieces to the marinade, ensuring they are well coated. Allow the chicken to marinate in the refrigerator for at least 30 minutes.
  2. In another mixing bowl, combine Greek yogurt, grated cucumber (squeezed dry), lemon juice, olive oil, minced garlic, salt, and chopped dill. Mix well until all ingredients are combined. Set aside in the refrigerator.
  3. Heat a cast iron skillet over medium-high heat. Add marinated chicken pieces in batches if necessary to avoid overcrowding. Cook for about 7–10 minutes until golden brown and fully cooked through.
  4. Start with a base of cooked rice in each bowl. Layer on sautéed chicken pieces followed by diced tomatoes, cucumbers, lettuce, red onion, crumbled feta cheese, and fresh parsley. Top with a generous dollop of tzatziki sauce before serving.
