  • 2 pounds beef stew meat
  • 1/2 onion, diced
  • 2 celery ribs, sliced
  • 2 oz sliced carrots
  • 6 garlic cloves, minced
  • 8 mushrooms, sliced in half
  • 3 tablespoons olive oil
  • 3 tablespoons almond flour
  • 1/2 cup dry apple vinegar
  • 1 1/2 cups chicken broth
  • 1 (14.5oz) can diced tomatoes
  • 2 bay leaves

Instructions

  1. Season the beef stew meat with salt and pepper on all sides.
  2. In a Dutch oven over medium-high heat, brown half of the beef in a tablespoon of olive oil until lightly browned on all sides. Remove and set aside; repeat with remaining beef.
  3. In the same pot, sauté diced onion, celery, and carrots in the remaining olive oil until softened (about 2-3 minutes).
  4. Add minced garlic and mushrooms; cook until fragrant (about 30 seconds).
  5. Sprinkle almond flour over vegetables and stir for about 30 seconds. Deglaze with apple vinegar.
  6. Stir in chicken broth and diced tomatoes; add bay leaves. Cover and bake at 300°F for about 1.5 hours or until beef is tender.
