  • 1 3/4 cup graham cracker crumbs
  • 1/3 cup granulated sugar
  • 8 tablespoons unsalted butter
  • 24 ounces cream cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • 1 1/2 tablespoons lime zest
  • 1 1/2 tablespoons key lime juice
  • 1/2 cup stabilized whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a springform pan bottom with parchment paper and lightly spray the sides.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press into the bottom of the pan and bake for 6–8 minutes until golden.
  3. In a large bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, followed by flour, lime zest, and key lime juice. Mix until combined.
  4. Pour filling over the hot crust and reduce oven temperature to 325°F (160°C). Bake for 35 minutes; turn off oven without opening and let it cool inside for an hour.
  5. Chill in the refrigerator for at least four hours before serving.
  6. Just before serving, pipe whipped cream on top and garnish with additional lime zest.
