  • 1/2 tsp baking soda
  • 1/2 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 3/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 14 oz sweetened condensed milk
  • 1 Tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2 large egg yolks
  • 1/2 tsp lemon extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine flour, oats, salt, and baking soda. Stir in sugars until smooth.
  3. Mix melted butter and vanilla in another bowl, then combine with dry ingredients until moistened.
  4. Press half the crumb mixture into a greased 8×8-inch baking dish and bake for 15 minutes.
  5. Whisk together condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract in a separate bowl.
  6. Pour filling over baked crust, spreading evenly. Sprinkle remaining crumb mixture on top.
  7. Bake for an additional 23 to 26 minutes until lightly golden.
  8. Cool at room temperature before refrigerating for at least an hour before serving.
