- 1/2 tsp baking soda
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 3/4 cup unsalted butter (melted)
- 1 tsp vanilla extract
- 14 oz sweetened condensed milk
- 1 Tbsp lemon zest
- 1/3 cup fresh lemon juice
- 2 large egg yolks
- 1/2 tsp lemon extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine flour, oats, salt, and baking soda. Stir in sugars until smooth.
- Mix melted butter and vanilla in another bowl, then combine with dry ingredients until moistened.
- Press half the crumb mixture into a greased 8×8-inch baking dish and bake for 15 minutes.
- Whisk together condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract in a separate bowl.
- Pour filling over baked crust, spreading evenly. Sprinkle remaining crumb mixture on top.
- Bake for an additional 23 to 26 minutes until lightly golden.
- Cool at room temperature before refrigerating for at least an hour before serving.
