  • 1/2 cup maple syrup
  • 1/4 cup reduced sodium soy sauce
  • 6 boneless, skinless chicken breasts
  • 3 tablespoons olive oil (divided)
  • 1 shallot (diced)
  • 2 tablespoons chopped fresh rosemary
  • 3 cloves garlic (minced)
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard

Instructions

  1. In a small bowl, mix together maple syrup, soy sauce, 2 tablespoons of olive oil, diced shallot, rosemary, lemon juice, Dijon mustard, garlic, salt, and pepper.
  2. Combine the marinade with the chicken in a Ziploc bag and marinate for at least 30 minutes or overnight.
  3. Preheat your grill to medium-high heat.
  4. Brush the marinated chicken with remaining olive oil and season again with salt and pepper.
  5. Grill the chicken for about 10 minutes or until it reaches an internal temperature of 165°F.
  6. Serve immediately garnished with fresh rosemary if desired.
