  • 2 boxes white cake mix
  • 1 package lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • Key lime frosting
  • Green sprinkles
  • Toasted coconut and lime zest for garnish

Instructions

  1. Preheat your oven to 350°F and spray a mini bundt cake pan with non-stick cooking spray.
  2. Mix both cake mixes as per package instructions.
  3. Divide batter into two bowls: one with about 13-1/3 cups and the other with 13-1/4 cups.
  4. To the first bowl, add shredded coconut and coconut extract; mix well. In the second bowl, stir in the lime jello.
  5. Fill each well of the pan with 1/3 cup coconut batter followed by 1/4 cup lime batter.
  6. Bake for about 22 minutes or until a toothpick comes out clean.
