- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup sour cream
- 3 large eggs
- 4 oz semi-sweet chocolate (for ganache)
- 1/2 cup whipping cream
Instructions
- Preheat your oven to 325°F (170°C). Position the rack about one-third from the bottom.
- Wrap a 9-inch springform pan with aluminum foil, ensuring it is well sealed. Lightly grease the pan.
- In a mixing bowl, crush Oreo cookies and combine them with melted butter to create the crust.
- Press the mixture into the bottom of the springform pan and bake for approximately 10 minutes.
- In another bowl, beat together cream cheese and sugar until smooth, then mix in cornstarch, sour cream, and vanilla extract.
- Add eggs one at a time, mixing until just combined. Fold in chopped Oreos.
- Pour the cheesecake filling over the baked crust and bake in a water bath at 325°F for about 50-60 minutes or until set but still slightly jiggly in the center.
- Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours or overnight.
