  • 5 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 3 large eggs
  • 4 oz semi-sweet chocolate (for ganache)
  • 1/2 cup whipping cream

Instructions

  1. Preheat your oven to 325°F (170°C). Position the rack about one-third from the bottom.
  2. Wrap a 9-inch springform pan with aluminum foil, ensuring it is well sealed. Lightly grease the pan.
  3. In a mixing bowl, crush Oreo cookies and combine them with melted butter to create the crust.
  4. Press the mixture into the bottom of the springform pan and bake for approximately 10 minutes.
  5. In another bowl, beat together cream cheese and sugar until smooth, then mix in cornstarch, sour cream, and vanilla extract.
  6. Add eggs one at a time, mixing until just combined. Fold in chopped Oreos.
  7. Pour the cheesecake filling over the baked crust and bake in a water bath at 325°F for about 50-60 minutes or until set but still slightly jiggly in the center.
  8. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours or overnight.
