  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown, about 6-8 minutes. Remove from skillet.
  2. In the same skillet, sauté onion until translucent, then add garlic until fragrant. Add red bell pepper until softened.
  3. Stir in cubed pineapple and cook for 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil then reduce to low heat. Cover and simmer for 18-20 minutes until rice is tender.
  5. Return cooked chicken to skillet and mix well. Heat through for about 2-3 minutes before serving.
