Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 11/2 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 11/2 cups powdered sugar
  • 1/21 tablespoon 2% or skim milk
  • 1 teaspoon vanilla extract
  • 11/2 cups fresh blueberries
  • 11/2 cups fresh strawberries, diced into 1/4-in cubes

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
  2. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  3. Scoop tablespoon-sized portions onto a lined baking sheet, flattening slightly. Bake for about 10 minutes or until edges are golden. Cool completely on a wire rack.
  4. For the frosting, beat softened cream cheese and butter in a bowl until smooth. Gradually add powdered sugar while mixing; use milk to achieve spreadable consistency.
  5. Once cooled, spread frosting on each cookie base and top with fresh blueberries and diced strawberries.
