  • 2 large eggs
  • 12 ounces cream cheese, room temperature
  • 1 stick unsalted butter (8 TBS), room temperature
  • 1 tsp vanilla
  • 1 3/4 cup powdered sugar
  • 1 pound strawberries, rinsed, hulled, and sliced thinly
  • 1 cup blueberries, rinsed and drained
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a stand mixer, cream together granulated sugar and butter until light and fluffy.
  3. Add vanilla and eggs; mix until combined.
  4. Gradually incorporate flour, baking powder, and salt until just combined.
  5. Chill the dough for 30 minutes.
  6. Grease a solid pizza pan and evenly spread the chilled dough across it.
  7. Bake for 16-20 minutes until lightly golden; cool completely in the fridge.
  8. Prepare frosting by blending cream cheese and butter before gradually adding powdered sugar and vanilla.
  9. Spread frosting over cooled cookie base; arrange strawberries and blueberries on top.
  10. Dust with powdered sugar before slicing into wedges to serve.
